A general binding spell is best done in the planetary hour of Saturn which begins the at the moment of sunrise on the planetary day of Saturn. That is, dawn on Saturday. There are several other planetary hours of Saturn on Saturday(Indeed every day has them), but it takes some calculation to figure those out. You can find a calculator at http://www.lunarium.co.uk/planets/hours.jsp
If you are doing a binding spell to defend against or combat enemies, you can use Mars, that would be Tuesday.
The planetary day begins at the moment of sunrise and effectively ends when the sun rises again the next day.
The dark moon is also a good time to do a binding spell. The sign that the moon is in can affect the action of the binding and should be chosen according to the type. See Spell Timing for more information on this.
