For me the day starts at sunset, just like the Celtic new year starts at Samhain. This is the time life starts underground. You could start the day at sunrise though, when the world springs to life, just as springtime is the start of the year for many.
A planetary day starts at the moment of sunrise. The first planetary hour, which aligns to the same planet of the day, begins then (Moon- Monday, Mars- Tuesday, Mercury- Wednesday, Jupiter-Thursday, Venus-Friday, Saturn- Saturday, Sun- Sunday). This is my favorite time to cast spells.
I always consider days to start at sunset, because my craft is based on Pictish/Celtic practices. I would recommend starting a day when people of your religion traditionally did.
