Are there any "anti magical materials" that exist? Things that would reverse spells and such?
I've heard how salt rings can trap spirits, and wards get rid of negative energy, but specifically, what materials, if any, are meant for weakening and/or disempowering magical entities? I'm writing a book, so I could use this for inspirational reference.

Salt absorbs energy which can act in a way of which you describe. Protective wards can block energies, but wards are created using magic, so anti-magic isn't an accurate description of them. The fae are said to be repelled by iron.
in addition to salt, ash made from rose petals reverses the meaning of any spell so if one added rose ash to a weight loss spell it would make you gain weight, love spell to being ignored, poverty or failure curse to success spell, etc,. one could also use the traditional iron to block magic (because the fae hate iron), or in medieval times it was believed that if calendula (marigolds) was planted in a witch's garden, it would temporarily render her powerless.
Cayenne Pepper is good for breaking hexes/negative spells.
Salt is a go to that many Witches use. It works pretty well, as you have mentioned.
Mirrors charged with the purpose of reflecting magick that comes your way can be effective.
A Devil's Snare charm can protect you from Entities and their influence by trapping them.
Lastly, Snow Drop charms (or live flowers) are said to neutralize any magick cast upon you.

Wards do not get rid of negative energy. A ward is used to enclose a space, if there is negative energy in the space it will still be there. Therefore to protect yourself you must cleanse the space before casting the ward. As for breaking magic there are hundreds of methods all depending on what the spell is that needs breaking and what region of the world your looking to portray.
First, I need to clarify: wards are barriers and shields, they do not necessarily get rid of negative energy. A ward can be programmed to do this and get rid of negative energy, but that is not what makes it a ward. It's like putting up a shield in battle: it doesn't help much if the opponents sword has already gone through you, you're still going to have a sword inside you. Wards are for defense against the attack when the attack hits, not when it's already hit.
Spell Reversal: Now this can heavily depend on the spell, but some go-tos for spell reversal are blessed thistle, vetiver or vetivert, black and white candle/s (not black or white, black AND white), black and white cloth, etc. Black and white are also the colors commonly used for unjinxing. Now, breaking a spell doesn't always undo its effects. For example, if you did a weight loss spell and you were losing too much weight, breaking the spell will stop its effects and you will no longer be losing a bunch of weight, however, this doesn't automatically mean you gain all the weight you need back just like that and any damage you created vanishes.
Weakening Magical Entities: Iron for sure (and steel works, too, but not as well). The whole reason iron is used against the fae is because it is known as a sort of magick repellent, and the fae are nearly the quintessence of magick. These is also reason why it's good to use tools that have an iron or steel coating in your craft as the magick doesn't stick to it, so they don't need to be cleansed as much. Iron can be used to repel magick, or if used in the right way to do so, tamper or fault magick.

It is all just energy and can be deflected, reflected, transmuted, redirected, or absorbed for the greater good. A talisman could be made to do what you are suggesting. Since negavity can come from anywhere, it could be made to work on negativity itself regardless of the source or the original intent. That's pretty much the point of a nazar- other than to openly advertise that the wearer is not easy pickings. Witch jars are a more covert version usually tied to a property. Also, feng shui teaches the principals of an environmental approach for converting negativity into beneficial energy.
As for the possible materials to use- salt , garlic, chili peppers, alum, sulfur, asafetida, urine, fire, sage, smoky quartz, mirrors, yucca, hawthorn, angelica, wood betony, coffee, agrimony, burdock, hematite, to name but a few. All blessings upon you and on the success of your book.
